Well, the real chirashi is obviously different, better, with more fish…
I’ve tried my best with what I had: it!
So I used the same thin slices I used for the sushi and instead of doing little balls of the sushi rice, I put everything in a bowl, cover it with the fish and sprinkled it with a Japanese chilli pepper mix.

A short note on this raw posts: as you read, few days ago I bought a whole salmon of 2 kilos. I processed all that night, but as I’m lazy (and wise), I’ll give slow sips of what I did with it. This doesn’t mean I ate the fish, raw, after 1 week. It only means I ate it that night, took picture of it, then published it little by little…

With my sushi book at end, I cleaned and cut the salmon accordingly to sushi cuts, and ended up with several fillets. A good part of them is nicely sleeping in the freezer, ready to be cooked. Few of them were processed as raw… While I was doing it, I wished for a thin Japanese knife… And I think I begin to save money for it… May be I’ll be able to buy one before my eighty birthday…
My husband made sushi rice: he’s better than me at it! You can find many recipes for that on-line
Once cooled, decided to make some little nice bowl, lay them on individual spoons, cover them with a thin slice of salmon fillet, and add over it some berries of pink pepper… I have to say that rwa salmon and pink pepper work like a blast: they are wonderful!!!

Daring Bakers: Lemon Meringue Pie

Ah, the American classic, the one you see in every diner in American movies! The sumptuous, meringue pie with a bright yellow cream filling!!!
When I read what the new challenge would be I was really excited!!! Jen, the Canadian Baker made a wonderful choice!
I began to read the recipe and I was a bit struck: water and not milk in the cream?
But, as usually with our daring bakers recipes, everything worked! Water in the cream, yes, as it’s lighter, and with so much lemon you do not even notice it!
The lemon scent and flavour was perfect! I do not know if it was because I used organic lemons from Sorrento, the best lemon you can find in Europe, but it was the right balance of tangy and sweet!

The friends that ate it were very pleased! And me too, even if I would preferred a harder meringue, but that’s all my fault: I’m always afraid of burning meringue!!!

I have a new friend

(well, kind of, as it came dead in my house and now it’s resting well packed in my freezer… ;-P)
I love to buy food on-line: you can find amazing stuff and they deliver everything to your door, on time, any time…
I even love doing my normal grocery purchases on-line…
I have only one problem: quantities… Few months ago I bought 120 packs of paper tissues… We are still using them…

This time I bought this:

A salmon of 2 khilos

When it was delivered yesterday night, I directly poured myself a glass of Martini just at the sight of it: I needed pace in my mind before to think what to do about it…
And then I began to act…
Nothing was wasted, I can assure this: we practically throw nothing!

Prepare yourself for many upcoming salmon recipes!

Mango Verrines

I found astonishing mango: they were perfectly ripe, big, juicy and chosen by a very cute and gentle guy! ;-)
And I had them there, altogether with some FRENCH petit suisse (I would like to stress on the French origin of my petit suisse, because they are creamier then the horrible one you find in Italy…), so, what can do more justice to this two ingredients if not a verrine?
I know that my last sentence is not really logic… But, have I ever said to be a logic or non the less coherent person??? Never! So…
What I did was just to mix petit suisse with some cream and very little sugar and spoon it in the little glasses. It everything go with your own taste: I measured nothing! I just kept trying it until it had the right creamy consistence and the right sugary taste for my own palate. You do whatever with your own! :-)
Then I topped it with the blended mango mixed with some melted gelatine (for a big mango, 2 sheets (aka 4 g) of gelatine).
In the fridge for 3 hours.
Serve at room temperature.

Boiling

What do you normally do to free overwhelming anger?
Avoiding killing someone, I mean! ;-) Ok, maybe beginning a list of people you hate, but I need something physical…
Personally, I cook difficult recipes. Very difficult recipes…
As at this very moment I’m not surrounded by my cook book collection, but I have a wider option: the world wide web.
Now the problem is that if you google “easy recipes” more then 3 million entries appears. BUT if you google “difficult recipes” less then a million.

Let’s face it: our life is getting, day by day, lazier.
Nobody is willing any more to cook something that will employ your time for more then 1 hour or that will employ some skills.
I’m the first to use a stand mixer or a blender, but just beacuse they do thing better then me, not because they do them faster!
From time to time I enjoy challenging my self with something complicated, really hard, troublesome, ambitious, just to please me (Hey, I’ve done it!) and my hubby (Hey, she’s done it!)…
And since I have the blog, the screaming crowds under my window! But I will just throw you a (store bought) croissant… :-P

So, what shall I cook tonight instead of writing an angry letter to Sandra Bullock telling her I can’t stand any more her greasy hair and that will all the money she has she should get a decent hairdresser?
